Taco Spaghetti

Mexican-Inspired Pasta Skillet
Ingredients:
1 lb spaghetti
1 lb ground beef
1 packet taco seasoning
1 (15 oz) can diced tomatoes
1 (15 oz) can corn, drained
1 (15 oz) can black beans, drained and rinsed
1 cup salsa
2 cups shredded Mexican cheese blend
1/2 cup sour cream
1/4 cup chopped fresh cilantro
2 green onions, sliced
Optional toppings:
Sliced jalapeƱos
Diced avocado
Extra sour cream
Directions:
Cook spaghetti according to package instructions. Drain and set aside.
In a large skillet, brown the ground beef over medium heat. Drain excess fat.
Add taco seasoning to the beef and stir to combine.
Add diced tomatoes, corn, black beans, and salsa to the skillet. Simmer for 5 minutes.
Add cooked spaghetti to the skillet and toss to combine with the beef mixture.
Stir in 1 1/2 cups of the shredded cheese and sour cream until well incorporated.
Top with remaining 1/2 cup of cheese, cover, and let it melt over low heat for 2-3 minutes.
Remove from heat and garnish with cilantro and green onions.
Serve hot with optional toppings as desired.
